My tiny peach tree is overloaded with peaches. I need some fun recipes! I found one to share and hope to make it this week. Other than peach pies or peach cobbler, do you have any great peach recipes?
Peach Salsa
Ingredients
- 4 ripe but firm yellow peaches, chopped (skin on or off, your choice, skin on makes for better color, but if skin is too thick or fuzzy you may want to peel first)
- 2-3 Tbsp chopped shallots or onions
- 2-3 jalapenos, chopped (stem, seeds and ribs discarded)
- Juice of a lemon
- 2 Tbsp chopped fresh mint
- 2 Tbsp grated ginger
- 1 teaspoon sugar
- Salt and black pepper to taste
Method
1 Put the chopped peaches, shallots, and jalapeƱos in the bowl of a food processor. Add the remaining ingredients. Pulse 2-3 times, just enough to get most the pieces small and to well combine the salsa. Do not liquefy it.2 Place salsa into a bowl and cover. Let stand for an hour before serving to give the ingredients time to meld.
Serve with chips, with fish, pork, or chicken.
Makes about 2 cups.

I noticed your comment on Dad to Libbs blog re Day Zero (also 101 tasks in 1001 days).
Basically you set a list of goals (101) of your own choice, and set a start date. The challenge is to complete (hopefully all) the challenges in 1001 days.
I started my list in March along with another blogger. We decided to support each other and have grown into a group of about 25. (One of my challenges is to have a group of 101).
It's very exciting and fulfilling because you set goals that you really want to do. Perhaps things that need to be done, perhaps things you've wanted to do for ages but not quite git to. Alot of my challenges also involve my family.
